Ingredients

    1 pound black-eyed peas, dried, boiled and drained with no added salt
    4 cups Pacific Organic Low-Sodium Chicken Broth
    1 tbs Canola oil
    1 cup onion, chopped
    1 cup celery, chopped
    2 cups ( 1 14.5-ounce can) Del Monte Diced Tomatoes, No-salt added
    2 cup diced extra lean ham
    1 tbs dried oregano
    1 tbs ground cayenne, or to taste

Directions

Cook peas with enough water to cover until soft without adding any seasonings. Drain and set aside. Heat oil in bottom of large Dutch oven and sauté onion and celery until soft. Add chicken broth and scrape any bits on the bottom of the pan, add seasonings, tomatoes and ham; bring to a gentle boil. Add peas to the pot (adding hot peas to a cold liquid will cause the peas to split). Simmer for at least one hour. Serve over rice.
