Ingredients

    2 tbsp olive oil
    1 medium onion, chopped
    2 clove garlic, chopped
    1 medium butternut squash, rinsed and cubed
    1/4 to 1/2 cup balsamic vinegar
    Rosemary, salt and pepper to taste
    4 oz mushrooms, chopped
    2 cups swiss chard, chopped
    2 cups shelled edemame
    ~5 cups cooked whole wheat spaghetti
    Parmesan Cheese (optional)

Directions

Heat olive oil in large skillet, add onions and garlic and allow to carmelize. Add butternut squash, balsamic vinegar, rosemary, salt and pepper. Cover and let squash cook until just tender (~10 minutes). Add water if necessary. Add mushrooms, edemame, and swiss chard. Cover and cook until swiss chard is wilted (~5 minutes). Serve over hot spaghetti and sprinkle with parmesan cheese.
