Ingredients

    Shrimp, raw, 3 oz
    Green Beans (snap), 10 beans (4" long)
    Del Monte Diced Tomatoes, No Salt Added, 1 cup
    Salt, 1 tsp
    Pepper, black, 1 tbsp
    Garlic powder, 1 tbsp
    *Coconut Milk, 1.25 cup
    Water, tap, 2 cup (8 fl oz)

Directions

a large saute pot pour a little vegetable oil.



Add Garlic, onions, diced tomatoes and cook until onions are clear.



Add the shrimp, salt, black pepper and stir.



Wait a few minutes then add 2 cups of water and fresh long beans cut 4 inches.



When it begins to boil add the can of coconut milk, let it thicken and and check taste to see if it needs more salt and black pepper.

Serving Size: makes about 6 servings
