Ingredients

Can of black beans, 15 oz
Canned corn, 4 tablespoons
Chopped red onion, 1/4 cup
Toasted whole wheat bread, 1 slice
Nutritional yeast, 2 tablespoons
Flax meal (ground flaxseed), 2 tablespoons
Warm water, 4 tablespoons
Hot sauce, to taste (I used about 2 or 3 tablespoons, yum)
Salt, to taste
Tips
These are a bit crumbly, but delicious and easy to make. Try them with some sweet potatoe fries.
Directions
-Drain and rinse the beans and pour into a large mixing bowl. Use a fork to mash into a "chunky" consistency
-put two tablespoons of flax meal into a small bowl and add 4 tablespoons of warm water, set aside
-add corn, chopped onion, nutritional yeast and hot sauce to beans and mash together with a fork
-crumble toast (easy breadcrumbs) over bean mixture and then add the flax/water and mix it all up.
-divide mixture into four even sections in your bowl. -use your hands (or a giant spoon if you'd prefer) to form round "patties" and place them in a non-stick pan at medium heat. At this stage they won't look very much like patties but once they are in the pan, use your spatula to flatten and shape them to your likeness. Aim for a medium thickness. Too thick or too thin will make flipping them difficult (and messy).
-Wait about 3-5 minutes before flipping for the first time. Cook until brown on each side.
