Ingredients

2 t. olive oil
2-4 oz. minute steaks
2 T flour
1 can Rotel
Juice of 1 lime
Salt & Pepper to season flour
Tips
If you're in a big hurry, you can soak the steaks in lime juice instead of adding it to the Rotel then dredge them in flour. The lime juice helps to start the cooking process and the meat cooks a little faster.
Directions
Preheat olive oil in a non-stick skillet.
Season flour with salt and pepper.
Dredge minutes steaks in seasoned flour.
Place steaks in skillet and cook for 4-5 minutes per side (or to your liking).
Once browned and cooking on second side, add can of Rotel tomatoes and lime juice.
Bring to a mild boil, turn heat down to low, cover and cook for approximately 15-25 minutes.
Serve over rice or egg noodles.
