Number of Servings: 5

Ingredients

    2 cups pinto beans (cooke or canned)
    1/2 a cooked sweet potato
    5 wheat ritz crackers
    1/4 cup oatmeal
    1 egg white
    1 tsp salt (less if your using canned beans)
    1 tsp chili powder
    1 tsp peprika
    1/2 tsp cumin
    1-2 tblsp fresh cilantro
    3 cloves of garlic (optional)
    1/2 a jalapano pepper (optional)

Tips

If the mixture seems too wet, try adding more oatmeal or crackers


Directions

saute the garlic and jalepano if using.
combine everything in a food processor and pulse until desired consistency (slightly chunky, not pureed)
stick in the freezer for at least 10 minutes to make handling the mixture easier
shape into 5 burgers
spray pan with cooking spray and cook burgers on medium-medium high
