Introduction

Ingredients

    1 cup oat groats (these are not steel-cut oats - it's the WHOLE oat! They look similar to wheat berries.)
    4 cups water

    3 tbsp pumpkin
    1 1/2 tbsp applesauce
    1/2 tsp cinnamon
    1/8 tsp maple extract
    1/4 tsp vanilla extract
    1 egg white
    1 dropper liquid stevia (or your favorite sweetener)
    1 tbsp flax meal
    1/4 cup nuts (mixed, almonds, pecans, pepitas, etc.)


Tips

You can also stir in some dried fruit such as cranberries or raisins once the granola is cooled!


Directions

Place oat groats and water in a baking sheet, cake pan, or other pan with sides. Put in oven at 200* overnight (or start early in the morning and finish in the evening). The oats will become soft and cooked, then eventually they will harden and dry out. I stirred mine a couple of times to make sure they dried evenly. Took about 7-8 hours.

When the oats are dry, take a small, separate bowl and mix together all the remaining ingredients except flax & nuts. Pour over oats, stir to coat well, then stir in flax & nuts and mix. Put back in the oven at 250* for another hour or so, until dry and crunchy.

Let cool completely before storing in a glass jar or airtight container... or eating right away! ;-)
