Delicious as a salad topping, or on its own mixed with some salad dressing and sunflower seeds! Can also be sauteed and added to many recipes! Great to take to picnics and parties. Ingredients

    1 Whole Red Bell Pepper - Chopped
    1 Whole Green Bell Pepper - Chopped
    2 Large Carrots - peeled and chopped
    2 Stalks of Celery - chopped
    1/2 Red Onion - peeled and chopped

Tips

Add protein by adding kidney beans. Add carbs by adding corn. Delicious mixed with low-fat dressing.
