Ingredients

1 14-oz can pickled beets (chunks or slices)
1/4 cup white vinegar
1/4 cup stevia
dash of cinnamon*
Tips
*Leave the cinnamon out altogether or replace it with a small amount of orange zest - according to taste.
I usually triple this recipe.
Directions
Combine all ingredients in a covered saucepan on the stovetop. Simmer 15 minutes.
Remove from heat, cool slightly, put in sterilized jars (just to be safe), and refrigerate until cool.
Serve as you would pickled beets.
Serving Size: Yield: 1 pint jar (2 cups)
