Ingredients

    1 tbs olive oil
    2 cups yellow onion, chopped
    3 cloves garlic, minced
    1 bay leaf
    2 tsp cumin
    2 tsp chili powder
    2 tsp cayenne
    1 lb ground turkey breast
    2 - 14.5 oz cans of white beans (great northern beans)
    1 can chopped tomatoes preferably fire roasted with green chilis
    4 oz diced green chilis
    16 oz of frozen corn
    32 oz low-sodium, fat free chicken broth
    2-3 tbs dijon mustard

Directions

Sautee onions, garlic and spices (including bay leaf) in 1 tbs olive oil in a dutch oven or large pot over medium heat until soft, about 10 minutes. Add ground turkey and brown and break up for about 10 minutes. Add chopped tomatoes, beans, green chilis and frozen corn to meat mixture and cook for about 5 minutes. Add chicken stock and bring to a boil over high heat. Reduce heat to low and simmer for 10 minutes. Add dijon mustard and stir to incorporate. Cook for an additional 5-10 minutes until soup is simmering. Add salt and pepper to taste. Enjoy!!!
