Ingredients

Salad
1/4 C chopped pecans
2 t sugar
1/8 t ground red pepper
10 C salad greens
2 oranges, peeled and sectioned
1/4 C craisins
Vinaigrette
1/2 C fresh orange juice (1-2 oranges)
1/3 C fresh grapefruit juice (1 grapefruit)
2 T fresh lemon juice (1 lemon)
1 T extra-virgin olive oil
1 T honey
1 T Dijon mustard
1 T soy sauce
2 t minced ginger
Directions
Makes 6 servings
1. Toast pecans for 6 minutes over med-low heat. Sprinkle with sugar and red pepper. Cook another minute and cool on wax paper.
2. Vinaigrette -- mix ingredients in bullet.
3. Layer -- greens, oranges, and vinaigrette.
4. Mix craisins and nuts and sprinkle over salad.
