Introduction

Ingredients

5 cups flour
1 cup sugar
1 tablespoon baking soda
1/2 teaspoon salt
1/2 cup melted butter
1/4 cup oil
2 cups mashed sweet potato
2 eggs
1 1/4 cup milk (could also use buttermilk, I used 2% with a small bit of vinegar added)
1/4 cup wheat germ
Tips
I had to add another cup of liquid (I added water) to make mine wet enough. It's a really thick batter.
Directions
Mix all the dry ingredients and wet ingredients separately. Add wet to dry and combine till dry is just wet. For best results don't over mix.
Bake at 375 degrees for 20-25 minutes.
