Ingredients

    12 Medium raw shrimp (reserve the shells optional)
    1 cup Asparagus cut into 1" pieces
    1 clove of garlic (optional)
    3 Oz Whole wheat spaghetti
    1 Pat unsalted butter
    1 Tbsp extra virgin olive oil
    1 cup Chicken broth (or one cup shrimp stock)
    4 Oz White wine (optional)

Tips

For a richer flavor you can simmer the shrimp shells in water, strain and use the stock in place of the chicken stock. A little white wine during the reduction adds a lot of flavor too. Most of the alcohol evaporates


Directions

Peel shrimp and devein if necessary.
Boil lightly salted water for pasta. Drop the pasta. While the pasta is cooking...
Sautee fresh asparagus and minced garlic until heated through. Remove asparagus. Add chicken stock. Reduce to 1/2 volume. Add peeled deveined raw shrimp and cook until just about done. Approx 2 min. Reintroduce asparagus and warm through. Add pat of butter and stir until sauce has a sheen. Toss with strained whole wheat spaghetti.
