Introduction

CRANBERRY ORANGEY MUFFINS CRANBERRY ORANGEY MUFFINS
Number of Servings: 30

Ingredients

    1 CUP BUTTER (yes you can decrease the fat)
    5 eggs ( I used 1 1/4 cups egg substitute)
    1 cup splenda for baking
    1/4 cup fresh OJ
    2 cups white flour
    1 cup wheat flour
    3 cups fresh/frozen cranberries ( I chop 1/2 and leave the rest whole)
    1 cup 0% Greek yogurt
    2 tsp vanilla
    2 tsp baking powder
    1 tsp baking soda
    1/2 tsp cinnamon
    1/2 tsp nutmeg
    1/4 tsp ginger
    zest from one orange

Tips

you can cut some of the butter 1/2 at most and sub with apple sauce.


Directions

pre heat oven to 400
mix butter and sugar till blended add eggs and OJ. Add in yogurt and vanilla. Mix dry ingredients and spices together add to muffins mix until just incorporated. Either spray a muffin tin or use liners, I scooped with a #30 scoop, (30 ounces or 1/4 cup). bake at 400 for 18-22 min.
