Introduction

Number of Servings: 8

Ingredients

    1 lb extra lean ground beef
    1 lb extra lean ground turkey
    1 cup finely chopped sweet onion - divided (use 1/2 for the meat mixture and the other 1/2 for the sauce)
    1/2 cup finely chopped zuchinni
    1/2 cup finely chopped mushrooms
    1/2 cup finely chopped bell pepper (red or yellow)
    1/2 cup shredded carrot
    2 cloves garlic - minced
    1 tbsp fresh tarragon or 1/2 tbsp dried
    1/4 tbsp chili pepper flakes (optional) you can just use regular pepper instead
    1 tsp salt (optional)
    1 tsp seed style or dijon mustard
    2 1/2 tsp Worcestershire sauce - divided (use half in meat mixture and half in sauce)
    2 tbsp ground flax
    2 tbsp hemp hearts
    1 can tomato paste
    1 tbsp horseradish
    2 tsp splenda brown sugar
    1/4 cup water

Directions

Mix all the vegetables together with the garlic, tarragon, chili pepper flakes(if using), mustard & half the worcestershire sauce. Blend together really well. Add the turkey and ground beef and use your hands or a spoon to mix really well. Add the flax and hemp hearts as binding agents. The amount of flax & hemp harts you add depends on how moist or dry your meat mixture looks and feels. You should be able to form a patty or loaf without the mixture coming apart. If the the mixture is still too wet add more flax.
Then add the meat to the loaf pan and pat down into a loaf. Place your loaf pan on a baking sheet and place in a 350 degree oven for approximately 35-45 minutes.
You will able to tell the meatloaf is done by the color and you will see the clear juices bubbling around the edges of the meatloaf.
While the meatloaf is cooking, make the sauce.
in a small saucepan saute the remainder of the chopped onions with a little bit of chicken stock. Add tomato paste, water, horseradish, worcestershire sauce and brown sugar to the onion mixture. Simmer sauce for about 10 minutes, stirring constantly. Taste and adjust seasonings (sugar) if required.
During the last 10 minutes of cooking, glaze the meatloaf with the sauce.
