Ingredients

4 oz raw, peeled shrimp, minced
8 oz wonton wrappers (small)
1 TB diced green onion
1-1/2 cups sliced celery
4 cups reduced sodium chicken broth
1/4 cup chopped water chesnuts
Directions
To prep, mix shrimp, water chesnuts, and onion together in a bowl.
Spread out the wonton wrappers and put 1 small dollup of shrimp mixture in the center of each. Wet the edges of the wonton and fold over, pressing lightly to seal.
Pour the chicken broth and celery in a medium sized pot and bring to a boil. Carefully drop in the dumplings and bring back to boil. Reduce to simmer and stir occassionally until noodles and celery are tender, about 10 minutes.
Garnish with fresh sliced green onions and reduced sodium soy sauce if desired.
