Introduction

Ingredients

    6 cups white whole wheat flour
    1 cup bread flour
    1 cup oats
    1/2 cup oil
    1/3 - 1/2 cup honey
    1 tbsp salt
    3 cups warm water

    I sometimes use gluten and/or dough enhancer when I have them on hand. It helps it to rise better.

Directions

Add water, yeast, and a small amount of honey to your kitchen aide mixer. Mix until combined and let sit about 5 minutes or until bubbly. Add the rest of the ingredients except the flour and 1 tbsp of oil. Add the bread flour and 4 cups of the whole wheat flour. Begin mixing the bread at a 2 setting. Wait until all of the ingredients are combined, then add the remaining flour one cup at a time until the dough pulls away from the bowl into a ball. Let the machine knead it for 10 minutes. Prepare another bowl with 1 tbsp of oil and transfer the dough. Let the dough rise for about an hour or until double in size. From here you may shape the loaves, or let it rise a second time for another 30 minutes. To shape the loaves separate the dough into three equal pieces. taking each one at a time, roll out the dough into a rectangle with one end the same length and the bread pan. roll up the dough jellyroll style, tuck the ends under and place it in a prepared bread pan. Cook at 375 for about 30 minutes or until it sounds hollow when you tap on the top. The internal temperature should be about 190 - 200 degrees if you have an instant read thermometer.

Serving Size: Makes 3 loaves that you can slice into 14 slices each.
