Ingredients
-
One package of chopped, frozen spinach
One 8oz container of fat free sour cream
3/4 cup of greek-style yogurt, 0-2% fat
1-2 cloves of garlic, to taste
1tsp of onion powder or less
Salt
Pepper
Tips
Indian-style dip - add curry and rogan josh...it's like Saag Paneer!
Go very slowly with the seasonings and taste - it can get overpoweringly onion-y or salty!
The addition of greek-style yogurt instead of mayo here boosts the protein content and makes it easier on folks with lactose sensitivities.
Great for folks on weight watchers who are volume eaters, like me!
Directions
Place spinach in a pan and heat on low until dethawed; once completely warm through, add 2 cloves of mashed or finely chopped garlic and cook for a few seconds to take the edge off the garlic. Remove from heat and transfer to a glass bowl.
Add yogurt, sour cream, salt, pepper plus a little bit of the onion powder. Taste. Adjust slowly until it suits your requirements for flavor and salt.
Refridgerate.
Serving Size: Makes a generous 2 cups
