Introduction

Number of Servings: 6

Ingredients

    1-1/2 lbs. Ground Turkey, Breast Meat
    1 pkg. Organic Extra Firm Tofu, cubed
    1-1/2 lbs. zucchini, cubed
    8 oz. mushrooms, sliced
    1 medium white onion, diced
    2 Tbs. Olive Oil
    1 bottle Pickapeppa Sauce
    1 cup brown rice, cooked

Tips

Add in any of your favorite vegetables - diced red pepper, broccoli, etc.


Directions

Heat Olive oil in large skillet, saute onions, then add in tofu and saute a few minutes more, then add mushrooms and saute a minute or two. Add zucchini and saute for another minute. Then add ground turkey and break up throughout dish. Saute for 5 to 7 minutes until no longer pink. Add cooked brown rice and pickapeppa sauce. Stir until well combined and heated through. Dish into bowl and top with sliced cherry tomatoes and Crumbled greek feta cheese
