Ingredients

    4 boneless; skinless, chicken breasts
    1 c. uncooked instant brown rice
    14 baby carrots, diced
    1 small onion, diced
    1 celery stalk, diced
    8 c. low-sodium fat-free chicken broth

Directions

boil chicken in the chicken broth until done, cut into 1"x1" cubes (bite size pieces), add carrots, onion, celery until tender crisp; add the brown rice. Cook until the rice is done, serve hot and enjoy on a cold winter day or if you are feeling sick.

    I thought this soup was an excellent comfort food. I would make this again. The only changes I would make the next time would be to add some salt, pepper, other seasonings. A small salad with this soup made an easy, very good and very filling meal. - 6/23/11

    Thank you Honey! I had very few things in my fridge and pantry at the time and was hungry so I figured I would try something different with what I had on hand. The only seasonings I use is Mrs. Dash.

    This soup was so delicious, one of the best soup I ever made. I did have to add a lot of water tho as I used regular long grain brown rice - 1/11/12

    I added a little bit of curry and poultry seasoning because I was out of thyme. I put the carrots in just at the last and they were still crunchy, which is how we like them. Very tasty! - 9/11/10

    That soup was way better than I thought. I did however use chicken that was left over from grilling, but it was still great! - 4/24/07
