Ingredients

12 oz. of boneless, skinless chicken breasts, chopped into bite-size pieces (Kirkland can)
2 packages of Tofu Shirataki noodles
6 tbsp. of PB2 powdered peanut butter
1/2 cup of water
2 tbsp. of low-sodium soy sauce (use Bragg)
2 cloves of garlic, finely chopped
2 tsp. of brown sugar
1 tbsp. of lemon juice
2 tsp. of ginger
1 tsp. of curry
1/4 tsp. of Tabasco sauce (omit--use red pepper flakes or ground)
5 fresh basil leaves
2 handfuls of bean sprouts (a 2 serving bag)
Directions
Spray wok with fat free cooking spray; add chicken and cook over medium-high heat (add some extra soy sauce to the chicken). While the chicken is cooking, combine PB2, water, soy sauce, garlic, brown sugar, lemon juice, ginger, curry, and Tabasco in small sauce pot. Cook over medium-low heat, stirring frequently.
Add basil leaves to wok with chicken.
Empty both packages of noodles into a colander and run water over noodles for at least two minutes. Boil noodles for 5 minutes, then strain in colander under running water for another minute or two. Dry noodles with paper towel, then add noodles and PB2 sauce to wok with chicken. Stir all together for 2-3 minutes, then add bean sprouts to wok. Stir again for another 2-3 minutes; serve immediately. (If desired, garnish with additional bean sprouts and sprinkle with red pepper flakes.)
