Introduction
I've been wanting to try this out for a while now, and there are so many different variations to the recipe for "Celery Root Soup" out there. I just had to add mine into the mix. Ingredients
-
2 cups Turkey Stock, see recipe from my cookbook
2 cartons (900ml) Campbells, No Salt Added, Chicken Broth
1 cup Make Your Own "Cream of" Soup (1 Can), see recipe from my cookbook
2 pound celery root
3 large cooking Onions,
2 tbsp Mrs Dash, Extra Spicy Blend
2 tbsp Mrs Dash, Onion & Herb Blend
1 tbsp Kirkland, organic no salt seasoning,
2 tbsp compliments, worchestershire sauce
6 tbsp Kikkoman, ponzu citrus seasoned soy sauce
Tips
Be careful to do in batches if using a regular blender, as hot ingredients can cause a blender explosion due to the vacuum created by the heat and the spinning motion. Remember the cooking shows and their blow ups.
Directions
Peel and chop the onions, and the celery root.
Add turkey stock to large soup pot.
Cook for 5 minutes on high in microwave.
Add 1 carton of Chicken Broth, stir and cook for another 8 minutes on high in microwave.
Puree the celery root and the onions, either with an emersion blender (my choice) or in a regular blender.
When this is completed add in the cup of "cream of" soup mix, all the spices, sauces and the remaining carton of chicken broth.
Stir with your emersion blender once more, and let simmer for remaining time.
Garnish with a little sour cream, and enjoy.
Serving Size: Makes 12 - one (1) cup servings
