Ingredients

    1 cup couscous
    1 cup veggie broth
    1 can chickpeas
    1/2 cup scallions
    1/2 cup feta
    1/2 cup kalamata olives, chopped
    Trader Joe's Goddess dressing, to taste (2 tbs used for calculationgs)

Directions

Cook couscous in broth according to package directions. Fluff with a fork, then add beans, scallions, feta and olives. Dress to taste and serve.
