Ingredients

    2 100 gram filet mignon steaks
    6 oz bag of spinach
    2 organic vine ripened tomatoes
    1 clove garlic
    1 tsp minced shallot
    2 tsp rosemary
    2 tsp basil
    2 tsp parsley
    2 tsp balsamic vinegar
    salt/pepper
    1 tsp olive oil (from the Misto Olive Oil Sprayer)

Directions

Pre-heat the grill. Core and half the tomatoes. Lightly spray the tomatoes with the Misto, season with salt and pepper. Place tomatoes skin side up on an open grill. Cook for 8-10 minutes on each side. It's okay to burn 'em.

Rub rosemary, salt and pepper on the outside of the 2 steaks. Place steaks on the pre-heated grill. Cook for 4-6 minutes on each side for medium. Adjust cook time to accommodate your taste.

While the steaks are cooking, take the skin off of the tomatoes and chop. Add the shallot, basil, parsley, vinegar, salt and pepper to the chopped tomatoes and mix.

In another medium sized pan, spray with Misto sprayer and toast the garlic. Add the spinach and stir rapidly until wilted. Season with salt and pepper.

Put a bed of spinach on each plate. Top with filet and surround with tomato mixture as shown in picture.
