Introduction

Basically just followed the packet directions, but added veggies... Basically just followed the packet directions, but added veggies...
Number of Servings: 6

Ingredients

    1/2 medium onion, diced
    1 small red bell pepper, diced
    1 small zucchini, diced
    1-15oz can black beans- drained
    1-15oz can red kidney beans- drained
    1/4 tsp California Chili Powder (optional)
    2- 14.5oz cans diced tomatoes
    1- 15 oz can sweet corn kernels- drained
    1 packet Simply Organic Chili Seasoning
    1/4 cup water

Tips

Use what ever veg or beans your heart desires...


Directions

Lightly spray a pot with cooking spray. Add onions, peppers, and zucchini. Cook to desired consistency over med-low heat. Once ready, add beans and (if using, chili powder). Stir to spread chili powder throughout. Add tomatoes and corn. Mix 1/4 cup water with seasoning packet until well blended and add it to the pot. Stir all ingredients to combine. Bring to a boil. Reduce heat and allow simmer 15+ minutes till desired thickness is reached.

Serving Size: serves 6+
