Introduction

Wonderful salad to eat alone or with tortilla chips. Great in the summer, but we eat it all year long! Wonderful salad to eat alone or with tortilla chips. Great in the summer, but we eat it all year long!

Ingredients

    3 cans of black beans drained and rinsed
    3 cans of corn drained
    5-6 roma tomatoes
    1/2 red onion chopped
    1 green bell pepper chopped
    1 jalepeno finely chopped
    2 T finely chopped cilantro
    juice of 1 lime
    1 1/2 T finely chopped garlic
    1 cup balsamic vinegar
    3 T chili powder
    1tsp cumin

Directions

Combine all ingredients, stir together and chill for an hour. Eat as a salad or with tortilla chips as a salsa.

Serving Size: makes aproximately 15 1-cup servings
