Introduction

I found this recipe on skinnytaste.com, and it is excellent! Even my sons who don't like cabbage liked it. I changed a few proportions, but not much. I like to use Lowry's garlic salt to season the meat and cabbage. I also use the petite diced tomatoes instead of the whole canned tomatoes. Ingredients

    2 tsp olive oil
    1 lb. lean ground beef
    1 cup diced onions
    1 T minced garlic, or Lowry's Garlic Salt
    1/2 tsp thyme
    1 tsp paprika
    1/2 to 1 head cabbage, chopped and slightly cooked
    1 can petite tomatoes
    1 cup tomato sauce
    1/4 cup water
    2 cups cooked brown rice
    1-2 cups low-fat mozzarella

Directions

Preheat oven to 350. Spray a square casserole pan with non-stick spray. Heat large skillet and brown beef and onion. Use 1 tsp of the olive oil if meat is very lean. Season with garlic or garlic salt, thyme, paprika, black pepper. Add the tomatoes and tomato sauce; simmer until slightly thickened. While it simmers, chop cabbage and saute in 1 tsp olive oil. Cook over medium high heat until wilted and about half-cooked. Add the rice to the meat mixture. In casserole dish, layer half the cabbage, half the rice/meat mixture, cabbage again and meat again. If the tomato/rice/meat mixture seems thick, add the water. Cover tightly with foil and bake for 40 minutes or until mixture is bubbling on the edges. Remove foil; sprinkle cheese on top and bake until cheese is melted and starting to brown. (15-20 minutes).
