Ingredients

    Coconut Milk - Lite 100ml (entered as grams), 400 gram(s)
    Coconut Cream - Trident 165ml can (per can), 1 serving
    Onions, raw, 184 grams or 1 large sliced
    Garlic, 1 clove (remove)
    Olive Oil Spray
    Carrots, raw, 2 large peeled and diced
    Potato, raw, 1 large and 1 small diced
    Zucchini, 330 grams diced
    Blade Steak 630grams cubed and browned
    Curry powder, 2 tbsp
    Cumin powder 2 tsp
    fresh red chilli, 1 finely sliced
    Ginger Root, 3 tsp
    Lemon grass (citronella), fresh, 1 tbsp

    Plus 150ml water and salt and pepper to taste

Tips

Other veges would be great to add in here as well - especially big button mushrooms and Aubergines (eggplants) as they soak up all the curry like little curry sponges!


Directions

Brown the onions and garlic in a little spray oil - add to slowcooker.

Add other veges

Add the liquid and stir

Mix dry spices together and sprinkle over with the lemongrass and mix together thoroughly.

Put slowcooker onto low for 9-9.5 hours (so great for when your at work all day!

Serve on Couscous and greek yoghurt dolloped on top and a piece of Roti...yum! (calories for serving suggestion not included!)
