Introduction
This recipe was designed as way to use up a surplus I have of baby cereal and fruit. They taste great, are healthy and the kids (and I) love them! Ingredients

2 eggs
1 1/4 c flour (1/2 all-purpose, 3/4 whole wheat)
1 c infant cereal any flavor
3 jars baby food (or 10-12 oz pureed fruit like applesauce)
1 tsp baking soda
1/2 tsp salt
1 Tbsp baking powder
1 1/2 c fluid (I use 1 c skim milk and 1/2 cup juice)
2 T Canola or other vegetable oil
Tips
They do make a light and fluffy pancake, but I've struggled with adjusting to make waffles as the center is kind of gooey and comes apart in the waffle iron.
Directions
Beat eggs in a mixing bowl.
Add remaining ingredients and mix until smooth.
Cook in a non-stick pan on med-low heat (about a 4) until bubbles form on top and pop, then flip and brown the other side.
Enjoy with your favorite topping.
Serving Size: Makes 12 6" cakes
