Introduction

This makes a high protein breakfast with lots of nuts, seeds and sweet cranberries! This makes a high protein breakfast with lots of nuts, seeds and sweet cranberries!

Ingredients

    4 cups steel cut oats
    1/2 cup shredded coconut
    1/2 cup chopped almonds
    3/4 cup chopped walnuts
    1 cup dried cranberries
    1/2 cup pumpkin or sunflower seeds
    1/2 cup pineapple juice
    1/2 cup apple juice
    1/4 cup honey

Tips

This is so easy to make. You can easily substitute other nuts, dried fruits or seeds according to preference or availability.


Directions

In a large bowl, mix first six ingredients.

In a small pot, bring the fruit juices and honey to a boil. Simmer until reduced to 2/3 cup. Pour over dry ingredients and stir until thoroughly mixed.

Spread mixture on baking sheet and bake at 325 for 40 minutes. Stir once halfway through cooking time.
