Introduction

Muffins in the microwave that are moist, delicious and full of flavor. **note** nutritional values will vary depending on what brands of ingredients you decide to use.

The ingredients i used, made this muffin at just about 3 net carbs for 1 muffin. Please make sure to check product labels and calculate your own.

P.S- the nutritional values (at least the carb count/dietary fiber) listed for this recipe is not correct for the brands i used, this is my first recipe posting and had a hard time finding the right ones lol but i've listed beside each ingredient what brand i used. again, check product labels!

Ingredients

    1/8th C. ground flax seed- (hodgson's mill)
    1/8thth C. almond meal (red mill)
    1tsp. baking powder (great value)
    1tsp. cinnamon (5th season)
    1tsp. all spice ( mccormick)
    2 packets sugar substitute sweetener (i prefer truvia/stevia)
    1tbsp. butter-melted
    2 tsp. soy milk ( great value brand)
    2tsp. heavy cream (great value brand)
    1 egg
    1tsp pure vanilla extract ( great value brand)
    1/8th tsp orange extract ( watkins)
    2 tsp. pecans ( fisher naturals )
    2 tsps sugar free chocolate chips- about 20 chocolate chips ( hershey's)

Tips

delicious add ons- cut the muffin in half and spread the top of each half with 1tsp peanut better. top with 1 sliced strawberry or a few blueberries.

Remember: Note that adding anything additionally to the recipe will in turn add more calories/carbs depending on the addition.


Directions

Directions:
mix all ingredients a coffee cup. cook in mocrowave for about 1 min. and 20 seconds. (time may vary, add or subtract about 5 seconds until you find what cook time works best).
Remove from microwave, then take a butter knife and go around the edges of the muffin to release it from the cup, invert onto a plate and enjoy!
