Ingredients

Potato, raw, 3 large or about 6 cups diced
Kale, 2 cup, chopped (1 large bunch)
Salt, 2 tsp or to taste
Milk, nonfat, up to .25 cup
Butter, salted, 1 tbsp
you can also add onion, grated carrot, or other veggies
optional: sausage such as turkey keilbasa
Tips
my favorite method to chop the kale is to place it in the freezer overnight, then crumble it while still frozen. Remove the big chunks of stem. Some of the white potatoes can be replaced with sweet potatoes for a fun color and extra nutrition. You can add other mashable veggies as you like. (but then its not dutch any more!)
Directions
Chop the Kale.
Place kale, chopped potatoes and salt in a large pot, with one-two inches of water--you dont want to cover the potatoes, and you dont want a lot left at the end.
Boil until potatoes are soft
Mash potatoes and kale in the leftover liquid with the butter. Add milk as needed to achieve a mashed-potato-consistency. Season to taste. You can eat now, or place in a shallow baking dish, place sausage pieces (split vertically) on top of the potatoes, and bake at 350 until sausage is done--about 45 min. This makes a nice presentation
serve with low-fat mayo as a garnish.
