Ingredients

    1 3/4 lbs ground turkey 93/10
    1 tsp olive oil
    2 zuchhinis diced fine
    2 summer squash diced fine
    4 garlic cloves minced
    46 oz V8 vegetable juice low sodium
    14 oz tomato sauce
    1 can black beans rinsed and drained
    1 tbs cumin
    1 tbs fennel
    1/8 tsp cayenne pepper
    1/4 cup cilantro
    1/4 cup parsley

Directions

Brown turkey in stockpot, remove. Add oil, zuchhini, summer squash, garlic and saute until tender. Add back in turkey, add V8, tomato sauce, spices simmer for 20 minutes. Add cilantro and parsley cook for 5 minutes.

Serving Size: makes 6 -2 cups servings
