Ingredients

    2 lb ground extra lean turkey
    1 large onion, chopped
    1 garlic, minced
    1 tbsp chili powder
    3 cups of tomato sauce
    1 tsp sugar
    2 tbsp. chicken broth in powder
    1 cup sliced black olives
    1 small can of diced green chiles
    2 cups tortilla chips
    2 cup (16oz) low sodium cottage cheese
    1/4 cup egg substitute
    3 cups shredded Mexican mix cheese

Tips

Can be made with ground turkey, ground beef, ground bison, tofu or anything else!


Directions

Saute onions until translucent and a drop golden tint, then add garlic and saute the ground turkey until completely cooked and no longer pink. Sprinkle chili powder over meat and mix well, add tomato sauce, sugar, chicken broth in powder, half the olives and all the chiles. Simmer over very low heat 15 minutes.

Beat cottage cheese and egg together and set aside.

Spread 1/3 meat mixture in bottom of a greased casserole dish (13x9 inch). Cover with 1/3 the shredded cheese, half the cottage cheese mixture and half the tortilla chips. Repeat, finish with a final layer of meat. Top with shredded cheese. Bake uncovered at 350 degrees for 20 minutes or until heated through and cheese is melted. Serve topped with sour cream, green onions and remaining olives.
