Ingredients

1 1/2 cups brown rice (basmatic or jasmine)
1 can light coconut milk
2 c. water
1 t. salt
2 T. shredded coconut
1 T. oil
Tips
Toasted coconut can be served on top of the rice (just pan brown some shredded coconut).
Directions
Spread oil in the bottom of a regular sized pot. Add rice, milk, water, salt and coconut. Cook on high until boiling. Reduce heat to low and cook until rice is tender (about 50-60 minutes). Fluff rice and serve.
