    1 tsp EVOO
    1 large onion chopped finely
    1 cup grated carrots
    1 tsp minced garlic
    salt and pepper
    8 cups 99% FF Chicken Broth
    1 can diced tomatoes
    1 can garbanzo beans - drained & rinsed
    1 can red kidney beans - drained & rinsed
    8 oz. Tyson grilled chicken breast strips - chopped
    8 oz dry whole wheat penne pasta
    10 oz frozen mixed soup vegetables
    2-3 handfuls of fresh spinach
    1 tsp Italian Seasoning


Saute onion, garlic and carrots in olive oil till tender. Add broth, vegetables, beans and chicken. Add seasonings. Bring to boil, add penne and lower to med-high heat. Cook till penne is done. Throw in fresh spinach and stir until wilted. Ladel into bowls and garnish with croutons and grated parmesan cheese. Excellent!
