Ingredients

    1 1/4 cup all purpose flour
    1 cup quick oats
    2 teaspoons baking powder
    3 teaspoons Ener G Egg replacer and 4 Tablespoons water (or 2 eggs)
    1/2 cup soymilk, vanilla soymik, or other milk
    1/4 cup oil
    1/3 cup honey
    12 slices of bacon cooked, drained and crumbled

Tips

Bacon can be substituted for 1 pound sausage, 1 cup chopped ham or equivalent meat subsitute. 1 cup sharp cheddar cheese or cheddar-flavored soy cheese adds more savory flavor. The nutrional information does not contain cheese ingredients.


Directions

Preheat oven to 400 degrees. In a large bowl, mix flour, oats and baking powder. In a medium bowl, mix egg replacer and water. Add soymilk, oil and honey to egg replacer and blend well. Mix medium bowl ingredients with flour mixture until thoroughly moistened. Add bacon and blend. Spoon into muffin cups until cups are 3/4 full. Bake for 15-20 minutes.
