Introduction

Number of Servings: 3

Ingredients

    1 egg
    1 Tbsp olive oil
    1 tsp finely grated lemon rind
    1 Tbsp lemon juice
    1/2 tsp prepared mustard
    1 Tbsp fresh chopped parsley
    Topping:
    2 slices whole meal bread - crumbed
    1 tsp finely grated lemon rind
    1/3 cup grated cheddar cheese
    2 Tbs finely chopped pickles or capers
    18 oz Tilapia

Tips

Great with garlic oven fries and salad or broccoli slaw, I am a Kiwi girl and this is a quick and healthy version of fish and chips!


Directions

Spray a baking dish with non stick spray, layer fish fillets.
In a small bowl whisk egg, olive oil, lemon rind and juice, mustard and parsley, poor over the fish.
Mix all the topping ingredients and sprinkle over fish mixture.
Set fish under medium grill, not too close for 10-15 minutes.
