Introduction

Ingredients

    1 1/2 Cups uncooked white rice
    1 lb lean ground beef
    1/2 to 1 cup bell peppers chopped
    1 qt. canned whole tomatoes
    1 can (6 oz) tomato sauce
    2 tsp cumin powder
    1 cup chopped onions
    1 1/2 tsp salt
    1/2 tsp black pepper

Tips

To reduce cook time, cook rice done. If you wish to cook recipe in a crock pot, all day, add uncooked rice (with water and salt per rice recipe) and allow ingredents to cook all day. The longer this cooks, the better it tastes.


Directions

brown ground beef with 1/2 cup onion and drain well. While beef is browning, cook 1 1/2 cups white rice per package instructions--reducing covered cook time by half. In dutch oven mix beef, partially cooked rice, chopped peppers, remaining onions, cumin, salt, pepper, tomato sauce and whole canned tomatoes. Bring to a simmer. Place in oven and cook for 30 to 45 minutes or until rice is completely cooked and peppers and onions are done.
