Introduction

Ingredients

    6 T. Fresh or bottled lemon juice
    3 t. Chopped fresh or 1 t dried oregano
    4 t Extra Virgin Olive Oil
    1 t Salt
    8 garlic cloves, minced
    1 pound boneless, skinless chicken breast, cut into 1 inch pieces
    Cooking spray

Tips

Top this chicken with feta, olives and Tzatziki sauce. Can make sandwiches with pita, or top 2 cups of romaine lettuce for a delicious Greek salad.


Directions

Combine all ingredients, except cooking spray, in a zip-top plastic bag; seal and shake. Marinate in the refrigerator for 30 minutes, shaking the bag once during that time. Remove chicken from bag and discard marinade. Thread onto skewers and cook in a grill pan (sprayed with Pam), for about 8 minutes each side.

Serving Size: Makes about 8 pita sandwiches
