Introduction
This is my husband's recipe for vegetarian black bean burgers. He is a staunch meat-eater, and he loves these burgers because not only do they taste good and are healthy, but they also have a good texture (they don't crumble like some veggie burger recipes). Ingredients
-
1 16-oz. can of black beans, drained and rinsed
1/2 of a green pepper, cut into small pieces
1/2 of an onion, cut into wedges or such
3 cloves of peeled garlic
2 large eggs
1 Table spoon of chili powder
1 Tablespoon of cumin
1 Tablespoon of Hot Sauce
1 Cup of Bread crumbs
Tips
I like to use a food processor to mash and mince and mix, especially when I make large batches (we make double and triple batches, and store in fridge for a few days. Next time, I plan to make extra an freeze the patties - I think they will freeze well for an easy meal, or to take to work for lunch, etc.).
You can also use dry beans - cook according to package directions, then use 2 cups cooked beans - but it defeats the "quick and easy" aspect of the recipe.
You can adjust the onion and spices to your own tastes.
You can also use different types of beans (with different combinations of spices) to make other types of bean burgers. The possibilities are limited only by your own imagination!
Directions
Preheat the oven to 375.
Mash the beans fairly well in a bowl.
Finely mince the green pepper, onion, and garlic.
Take the spices and the eggs and beat well.
Mix the pepper/onion/garlic mix into the beans, then add the egg/spice mix and mix that into it as well.
Add the breadcrumbs, start with about 3/4 of a cup and add more as needed until just about the texture of raw ground meat. (You can simply test by taking a bit of mixture in your hand, and try making a ball or patty. It should stick together easily and still be moist, without being too gooey. It shouldn't fall apart.)
Form the mixture into six patties, and place on a lightly greased baking sheet.
Bake in the oven for 20 minutes, flipping halfway through.
(You could also throw these burgers on the grill for a holiday BBQ treat.)
Serving Size: Makes 6 burger patties.
