Ingredients

    4 medium red skin potato quartered
    2 T olive oil
    1/2 t Italian Seasoning blend

Tips

Cooking method results in even browning on both cut sides of the potato quarters. Serving Size is set to one wedge for easy calculation of amount eaten.


Directions

Preheat oven to 350 degrees. Scrub and quarter red skin potatoes. In a 9X9 Baking Dish combine potatoes, olive oil and Italian Seasoning. Arrange potatoes in dish with one cut side down, cover with aluminum foil. Place dish in oven for twenty minutes. Remove foil, return to oven and roast for 15 minutes more. Turn potatoes to have other cut side down for an additional 15 minutes in the oven. Remove and serve.
