Introduction
I pulled the ingredients off a label from a commercially prepared ginger dressing we really liked, played with a few ingredients, and got very close to the same taste, while making this fresh, low-fat, low-calorie and sodium-free dressing! Ingredients

1/2 apple, grated
1/2 red bell pepper, grated
1/2 carrot, grated
1/2 celery stalk, grated
1/2" ginger root, grated
Mrs. Dash Herb Onion, to taste
1 T. vinegar
1 date, minced
Tips
I used blood orange vinegar and that kicked it up to a gourmet level.
Honey or agave could be used as a sweetner instead of the minced date.
Directions
Grind items in grinder or masticating juicer with a blank screen, or grate them, incorporating the juice that occurs during processing into the dressing.
Add a sprinkle of Mrs. Dash andvinegar to grated items.
Serve on top of 2-3 cups of salad greens.
Can be used right away, but it is better if it sits in the refrigerator for a day or two first, to blend the flavors. We like this so well, I usually double the recipe.
