Introduction

Number of Servings: 6

Ingredients

    *Hunt's 100% Natural Tomato Sauce Basil, Garlic & Oregano, 8 oz can
    *Contadina Italian Herb Tomato Paste, 10 tbsp (1 can)
    *Corn- Canned 1- 15.25 oz can. Freshlike brand, 15.25 oz
    *Beans - Cannellini (White Kidney) - Bush's Best, 3.5 cup (1 15 oz can)
    *Beef, Ground Beef 85/15 from Round, 6 oz
    *Bolthouse Carrot Juice, 6 oz
    *Chili Powder, 2.5 tsp
    *Gourmet Garden Basil Herb Blend - 3/4 tsp, 0.5 tsp...could also use dry basil.
    *Carrots (Shredded), 0.5 cup
    *Black Pepper (Ground), 0.5 tsp
    *Red Onion (1 srv = 1 med onion), 0.25 serving
    *Garlic - minced (1 tsp), 1 serving
    *Bell peppers, diced: mix of green, red, any color...I use what I had stored in freezer from my garden.

Tips

Recipe I adapted from mentions optional sour cream, tortilla chips, and shredded cheddar cheese as garnish. I'm just planning to eat as a soup/chili that has a lot of veggies in it, and used up stuff I already had at home this snowy day.

I added the carrot juice (wasn't in recipe I adapted from), but I had it on-hand, thought the mix needed more fluid for cooking, and I didn't have quite enough shredded carrots. I also added extra tomato paste as I didn't have fresh tomatoes that original recipe called for.


Directions

In sauce pan: brown ground beef (shredded), with onions and garlic...then drain.

Empty after draining into slow cooker (lined with a liner for easy clean up). Then add all the other ingredients, stir up. Cover, and heat with slow cooker x 8 hours on low.

Serving Size: 6 servings, about 1 cup (I"m guessing as I'm entering as I'm trying for first time)
