Ingredients

    1/3 cup rolled oats
    1/4 cup canned pure pumpkin
    1 tbsp (1/3 serving) unflavored soy protein powder
    1 tbsp Silk coconut milk vanilla creamer
    1/4 cup water
    1/4 tsp vanilla
    1/2 tsp cinnamon
    1/2 tsp pumpkin pie spice
    1 packet stevia

Directions

Preheat (toaster) oven to 375 degrees.
Spray a mini loaf pan with nonstick spray.
Combine all ingredients except for pumpkin pie spice in a small bowl, and then pour into the mini-loaf pan.
Sprinkle the 1/2 tsp pumpkin pie spice as evenly as possible over the oatmeal.
Cook on the top shelf of the preheated oven for 20 minutes or until firm; then, set oven to broil for another 3 minutes.
When done, it comes out very easily from the pan, ready to be eaten with whatever toppings or sides you desire!

Serving Size: makes 1 mini loaf (single serving)
