Veggie Salsa Veggie Salsa
Number of Servings: 10

Ingredients

    2 large tomatoes, diced
    1 large purple onion, diced
    1 bell pepper (any color), diced
    1 small can diced green chili peppers
    1 small jar minced garlic
    2 tbsp red wine vinegar
    1 squeeze of fresh lime
    Diced cilantro (to taste)
    Salt & pepper (to taste)

Directions

Add all ingredients into large bowl and place in refrigerator with for at least an hour.
This can be served with tortilla chips or a hearty cracker. For added flare you can also include diced avocado, and corn.

    My recipe calls for black beans, black eyed peas, and shoe peg corn along with rotel (lime and cilantro). Yummy doesn't even begin to describe it. Addicting is a better word. I could almost eat it without chips! - 6/18/10

    I make something similar with the black eyed peas and rotel tomatoes. We'll toss a little diced chicken on a salad and use this as dressing. Yummy - 6/18/10
