Introduction

Number of Servings: 12

Ingredients

    5 large Eggs
    4 slices of lite Swiss cheese
    1 Avocado
    1/2 Tomatoes
    2 slices of smoked honey ham
    24 Wonton wrappers
    1/2 cup Shredded Cheddar cheese
    1/2 cup fresh Spinach


Tips

you can always reduce calories by only using 1 wonton wrapper per cup, or using egg whites only, and/or removing cheese altogether.


Directions

Preheat oven to 400 degrees.

Spray a muffin/cupcake pan with liht cooking spray. Add 2 wonton wrappers to each cup. Add a pinch of cheddar cheese to the bottom of each cup.

Cook in over for 4 min. While thats cooking wisk up eggs and cut up cheese and ham. Add all together in 1 bowl for easy pouring.

Take the wonton cups out of the oven and add in egg mixture with other ingredients. Hold on adding the avocado and tomato until ready to eat.

Bake for 12 min.

Serving Size: makes 12 wonton cups, 148 cal each.
