Ingredients

    1/2 table spoon of light olive oil
    1/2 cup dice red bell pepper
    1/2 cup dice green bell pepper
    1/2 cup dice yellow or orange bell pepper (or both)
    1/2 cup dice onion
    3 garlic cloves (crushed or fine diced)
    1 can of Goya Pigeon Peas (Gandules) drained and rinsed
    2 packets of Goya sazon con cilantro and achiote
    1 packet chicken bouillon or 2 tsp
    4 table spoons of fresh cilantro
    2 cups medium Gain Rice
    3 cups of water
    1/2 cup of canned coconut ( i used Goya)

Tips

I like to stir rice half way threw cooking time to prevent to much "con con" ( crunchy/burnt rice on the bottom)


Directions

dice all veggies and saute in olive oil on low for 8-10 minutes (until fragrant and onion and peppers become soft).Drain and rinse Gandules and add to pot, turn heat up to medium and add in rice, sazon, bouillon, and cilantro stir and let cook for a minute or two until all ingredients are hot ,stir in 3 cups of water,bump up heat to medium high and bring to a boil and cook uncovered until almost all the water has absorbed, once this has happened stir in coconut milk cover and cook on low for 20-25 minutes. fluff rice with fork and enjoy. Buen Provecho!
