Ingredients

    5 4oz Tilapia Filet
    1/4 C wheat flour
    1/4 C Panko
    1 egg

    Flour Tortilla

    1 mango
    2 sliced diced red onion
    1/8 C chives
    1 jalepeno, diced
    1 lime, juiced

Tips

I don't really like red onions, so I chopped these rather small and added just enough so that you could taste them. You could add more if you like this taste though I did find after a little experiementing that these amounts of ingredients added just the right blend of flavors so that the sweet from the mango could be tasted along with the zing from the jalepeno and onion was perfect.


Directions

Dry tilapia. Dredge in flour, dip in slightly beaten egg, then dredge in panko and place in a baking dish.
Baked for 20 minutes in a 350 degree oven.

Meanwhile, cut up mango into cubes. Dice the red onion, chives, jalepeno and add to mangos. Squeeze juice from 1 lime into the salsa and mix.

When the fish is done, cut it into strips. Place strips onto the tortilla, put salsa on top and serve.
