Ingredients

    1 (12 fl oz) can evaporated milk
    1 (14 fl oz) can sweetened condensed milk
    2 cups milk
    2/3 cup heavy cream
    2 egg yolks, beaten
    1 cup white sugar
    1 cup fresh lime juice
    2 tsp lemon extract (optional)
    1 (3 oz) pkg lime flavored gelatin
    6 whole graham crackers

Tips

*This mixture does take a bit longer to set up than most ice cream recipes.

*It will be tempting to pour the mixture in as liquid because of the gelatin..Resist the urge!! It makes a much better consistency if you allow the jello to firm up( not to mention safer for most ice cream makers) I leave mine in the fridge overnight

*If making for kids use Teddy Grahams instead of graham crackers for added cuteness


Directions

1.) In a saucepan over low heat, combine the evaporated milk, sweetened condensed milk, milk, and heavy cream. Cook until warm, whisking frequently.
2.) Once the mixture is hot to the touch, whisk in the gelatin mix and sugar, stirring constantly until both are dissolved completely. Temper in the egg yolks, remove from heat and stir in lime juice and lemon extract.
3.) Prepare mixture according to manufacture's instructions for your ice cream maker (ie, chill).
once the ice cream is thick, place large pieces of the graham cracker evenly on each side; they will break into smaller pieces as the machine churns.
4.) Mix for about 5 more minutes, transfer to
container(s) of choice, seal, and freeze until solid.
